Lyburn Old Winchester

Also known as Old Smales, Old Winchester is an older version of Winchester, on a previous page. This is now a much dryer and harder cheese, becoming more reminiscent of an Old Amsterdam with a distinctive nuttiness in flavour. Because Old Winchester is made with a vegetarian rennet, on a number of occasions the cheese is being sold, and used as a vegetarian replacement for a hard Italian cheese, and yet can still be used as a table cheese, it has that bit more versatility. We are selling them at about 18 months plus and they will average a little under 5kg each. The age will come and go as it is impossible to get the stock level right all the time. Always in the prizes, and last year, 2016. Gold at the British Cheese Awards, One Star Gold at the Great Taste Awards. It won best hard cheese at the Melton, Artisan Cheese Show and finishes the year with Bronze at the World Cheese Awards 2016 in Spain, against some very tough competition.

2017 off to a good start with a Highly Commended and second place in its class at the Artisan Cheese Awards at Melton Mowbray, and a Bronze at the British Cheese Awards at the Bath and West Show and more recently a Gold at the International Cheese Awards in Nantwich Cheshire. With the last few weeks a Two Star Gold at the Great Taste awards 2017.
