Saxon Creamery

Saxon Creamery in Cleveland, WI is located between Manitowoc and Sheboygan, on the Eastern shores of Lake Michigan.  The milk arrives at Saxon Creamery fresh, antibiotic and hormone free from a 6th Generation family farm.

The cream rich milk enters the cheese vats and the cheese making process begins. Our skilled Cheesemakers carefully follow established recipes adding the specific cultures, stirring speeds and times, cooking temperatures, and curd washing to create each style of cheese in the Saxon Family of Cheeses.

Each cheese wheel is handcrafted in the vat, gently pressed, and placed in brine tanks. The wheels are embossed with the Saxon logo – an Art Noveau-inspired motif of blowing leaves, symbolic of our embrace of tradition and nature. The cheeses are each trimmed and hand painted with a special coating to allow for the cheese to ripen.  The cheeses are then open air aged by rotation through three aging rooms maintained at specific temperatures and humidity for defined periods of time.
