55% FDM, soft cheese made of sheep’s milk.
The “Arzberger Bellino” is made in the dairy Leitner with pasteurized pure sheep’s milk. The cheese ripened in a silver mine for 6-8 weeks, is stored in 100 m deep in the mountain, embeded in millions of years old stones by constant 10 degrees, summer and winter. We wash the cheese with salt-water, turn the loafs and give it time for riping.
The undulating surface is dark yellow to orange, with undulating texture due to the high humidity level in the mine. The interior color ranging from white to cream, structure ranging from soft to creamy. Thanks to optimal climate conditions during ripening, this cheese is characterized by its refined flavor with a mild note.
