Colston Bassett’s Stilton is a rich cream colour with even blue veining throughout. The texture of the cheese is smooth and creamy with a mellow flavour that balances sweet and savoury notes. The cheese is best eaten at around 12 weeks but this can vary from cheese to cheese, as each one is an individual.
If carefully wrapped in wax paper, Stilton will keep well in the fridge for a couple of weeks. During this time the cheese will continue to mature, becoming creamier in texture and developing a more mellow flavour. If you need to store your Stilton for longer, it will freeze beautifully for up to three months. When it comes time to defrost, it is best to do so in the fridge or a cool larder for around 24 hours, so that the cheese does not become too crumbly.
