Cotija

cotija cheese

Younger cheeeses are mild and salty, somewhat like a young Feta. As the cheese ages, it acquires nuttier, tangier flavors and a drier, coarser texture. Best on tacos, salads, in soups, over rice, on casseroles, over beans, in guacamole, etc.
