It is thought that the production of cheese in La Granja first started in 1837. Our chesses remain handmade, continuing with this century’s traditions until this day. The characteristic taste and design of our dairy products is maintained through solely manual work and traditional cheese making techniques.
Our factory is enclosed in the 18th century farmhouse which has been upgraded and modernized over time to improve quality controls, working conditions and food safety whilst still carrying out the artesian and traditional process.
Our flock consists of 2800 sheep which consume most of the farm’s pasture throughout the entire year. Meadow diet is what gives our cheese its characteristic taste. Moreover, the diet of our cattle’s is also supplemented with the fodder and grain that we raise.
To take care of the flock and the mild production is a tough job. We need to milk the flock twice a day, look after births, maintain the maximum hygiene to avoid infections and take the stock to our fields for them to graze freely.
We start with the milking and refrigeration, making cheese every day of the year with the fresh same day morning milk in order to preserve all of its attributes.
